Try them like this: wash rapidly the mushrooms in running water. Make a sauce with an egg yolk, salt, lemon juice and extravergin olive oil. Chop finely some parsley, chives and a little garlic. Arrange the thinly sliced mushrooms on a plate, sprinkling them with the chopper herbs and garnishing them with the sauce.
